Assigning custom post type taxonomies (categories)

I see how to add a post category, but how can I assign a column to a custom taxonomy under a custom post type?

I just have the custom taxonomy of “location categories”

Just two values, indoors or outdoors.

Is this where I assign tax_?

Not sure how to assign this?
