What EXACTLY is this changing? I need to manually undo it.

Obviously this plugin doesn’t support sites that use SNI SSL on their virtual hosts (Which would have been nice to know, since SNI is common practice today)

I installed the plugin and now it redirects my virtual site that I installed it on to my apache default site.

I tried to disable it and it still redirects to the default apache site.

Even tried deleting .htaccess, on the virtual site, no luck. What EXACTLY is this plugin changing?

Look in your htaccess file in the root folder. It adds directive in there to redirect to the HTTPS URL.
