non page post?

I created pages (shows up in menu) and categories. Apparently posts submitted end up in the specified category.

However, I’d like to create actual new pages, but not as categories. Instead, I want so and so page (in the menu) to have a bunch of links linked to those new pages. How can this be accomplished?
