Per-product-category checkout fields customization

Hi,
I’m writing a function to obtain a per-product-category checkout fields customization.

I already customized fields for all product categories, as described here:

Is it possible to obtain fields customization for products belonging to specific product categories?

If you guys could help me that would be great! 🙂
