Custom Title For Each Page/Post

I know that I can set the way I want to title to be created in the template section, however, is there any way to customize the title for each page? I’m coming from using All In One SEO. I like the feature of being able to customize the description and title on each individual page/post.
While having the template feature is a good idea for default, it would be nice to be able to override the default title by writing a custom title for the particular page/post. Unfortunately the textbox for the title appears to be grayed out, that is, read only.
