Is there a reason you can’t change it in the settings page? You are looking for the “Breadcrumb Separator” setting under the General tab of the Breadcrumb NavXT settings page.

If you must use a filter, this already exists as bcn_settings_init. Look at the Breadcrumb NavXT Documentation’s Filter Reference section. It is meant for adding new default settings in for extension plugins, but has access to the full opts array before merging in the values from the database.

Adding a filter that completely bypasses the database setting values is dangerous as it can lead to confusion for users when their settings in the settings page are not reflected in the frontend. That becomes a support nightmare for me. I, for one, prefer to avoid support nightmares.
