custom post type editor

I am looking for a plugin or other solution that would assist me in editing custom post types. I have found many plugins that create the post types, and one that would edit the labels, but I am wondering how to edit existing types that are already registered. Ideally, I’d like something that can edit the default values that have been placed into custom fields, and edit whether its hierarchical or has an archive.

Also, how would I go about assigning a template from one post type to another for the front end display.

And one question regarding templates. I have several templates in the Pages post type that each have different back end settings associated with them. The custom fields. Is the template file that creates those options the same that creates the front end?

What I want to do is move a masonry template option from the pages post type to the galleries post type to eliminate the step of having to create an album and then a page to display the album.
