Just in case someone else comes looking for a solution to this I thought I’d post my solution…
This involves getting a child theme, so if you don’t know about child themes look here:

Then copy the files cart.php and order-details.php into the child theme.
In these files you will see print references formatting the links. ie;
under class=product-name you see this line:

echo apply_filters( 'woocommerce_cart_item_name', sprintf( '%s', $_product->get_permalink(), $_product->get_title() ), $cart_item, $cart_item_key );
Here the print line starts with “sprintf” You want to remove the anchor tags surrounding the %s. Since you now only have one %s, you also remove “$_product->get_permalink(),”
That will get rid of the link for the product name. So the final string of code will look like this:
echo apply_filters( 'woocommerce_cart_item_name', sprintf( '%s', $_product->get_title() ));
You do the same for class=”product-thumbnail” in cart.php and class=”product-name” in order-details.php
