I would like to publish a post but I don't want it to go out to subscribers

Is this possible? I have started a series of tutorials and was unable to post on my blog for the first one, but I a making an archived page for each tutorial. So I don’t want my post to go out in email back to back. make sense? I will have it linked to my archive page and visa versa. I am also curious if you can publish a post and choose a subscriber that I DON’T want to receive it, such as I am a craft blog I make gifts for people but I don’t want them to see the gift on my blog because it came straight to their email.
