Variable/Grouped product: select which variation price to display in listing

When you set either a variable or grouped product, in the product listing the price appears as “from …” displaying the lowest price.

In my case I am selling events tickets, where adult price is the standard, with the option of a have Child price.

By default woocom would displays the Child price in the “From …” string, while in my case I want to display the adult price (without “FROM”), and display the option of a child price just once inside the product page.

what’s the easiest way to achieve this?
