Don't update WP user data

I’m trying to remove the function that updates the WP user’s information on check out. Some of my users are sales people that will be entering customer information, and I don’t want their email addresses changed to the customer’s email address each time.

I found a hook I am thinking needs removed, but it isn’t working for me. Perhaps because it is in a class? I’m not even sure this is the one I want!
woocommerce_checkout_update_user_meta (in class-wc-checkout.php)

Any advice would be greatly appreciated.
