I would like to add pages without adding a menu item or dropdown. I am sure there is some super easy way to do this that I am just missing, but I would love a hand.

Sure.

What you need to do is to Create a Navigation Menu (YouTube video) and now you will have a control over the WordPress menu display on your site.

That is close to what I was looking for but what I really want is to not add a menu item every time I add a page. I will have some pages that don’t need to be displayed on the menu.

By creating the navigation menu, you can control what pages or custom link to display.

I think you miss few steps to make it happen.
