Review-centric pages with custom fields?

    I’d like to review music on my website and also have an auto-generated page of all reviews. I can make a Posts Category, and make new custom fields for the relevant info, but I also want a page that lists all posts in that category and all the custom fields, and make it sortable on any field. Any ideas on where to start?
