    上記のログの内容を確認したところ、予約完了時のメールの送信に関わる関数内で顧客情報としている配列が空の状態となっているのが原因です。
    Booking Packageでは予約完了メールを送信する前に予約を行った顧客の情報をデータベースのテーブルに保存し、保存した内容を「createEmailMessage」関数内で再度、取得していますが、顧客情報のデータベースのテーブルに対して追加が失敗しているか、WordPressの$wpdb->insert_id;が正常に動作していないのが原因です。
    データベース内のテーブルに新規の予約を行った顧客情報が保存されている場合は、$wpdb->insert_id;が原因で、顧客情報が保存されていない場合はテーブルに問題があると思われます。

    直るかどうかは不明ですが、プラグインを再インストールしてみてください。ただし、プラグインをアンインストールされるとBooking Packageで使用しているデータベース内のテーブルも削除され、ほとんどのBooking Package内での設定が削除されますので注意してください。
