eCommerce &Themes

I have an existing online store – awakewellness.com. I am wanting to rebuild that site in WordPress. I like what I see with eShop. That said.
Do I have to have a theme designed for eShop or can I use any theme and then use the eShop plugin? Is there any place I can read about the process?
