Just to add on what community member @chris2201, has shared, WooCommerce does not have this feature built-in, you can achieve this by using plugins or custom coding.
A simple way is to use a plugin like Custom Stock Status for WooCommerce, which allows you to customize the availability message for out of stock, in stock, and low stock items. You can set the message as “Call for availability and shipping” for the relevant products.
If you have coding skills or a developer at hand, you can also modify the WooCommerce template files to display this message.
