Disk: Enhanced caching method is persistent and it means that the page will remain cached and will not expire unless the cache is purged.
_old files are created when the cache is purged.
It’s fine to have _old files. if you always have only _old files – that’s a sign something purges cache all the time. like theme or some plugin.
Depending on your Purge Policy settings in Performance>Page Cache, the cache is automatically purged once the content is changed or new content is published. If nothing was changed and you have not purged the cache manually, as I stated before, this may mean that something else is calling the cache invalidation like some theme or other plugin.
If you have both normal and _old files, this means that the cache is purged, and the new file is generated. The _old file will remain there until the “Garbage collection interval” kicks in and the default time is 3600s
