Possible stripe hooks

Hey People,
I’m working currently on some extension of the stripe plugin for woocommerce. We are not running a multisite shop, but we do offer our products worldwide. So currently, we have for each market (mean country i.e. US, HK …) an stripe account, we want to display the stripe payment gateway based on the shipping country.
It’s possible to achieve this for existing customers, but we do yet not have a solution for new customer, i.e. if the new customer change the shipping country in the checkout process we want to be able to fetch that value to offer the right gateway since our checkout is only one page (no multi checkout site). So is there a way to hook into the checkout process to get the value of the selected shipping country?
I’m wondering how you guys solved that problem.
