The Per Page Sidebars (PPS) plugin allows blog administrators to create a unique sidebar for each Page. No template editing is required.
Perfect - And easy for my clients
However it would be great if you could make this work on custom post types too. :)

Solid Plugin for changing Sidebar's on Pages
This is great for specific needs if you're only needing to change the sidebar on Pages and not Categories, Archives, Author pages, etc. What it does, it does very well, I just subtracted one star as I would like to see it a little more robust in order to make changes to additional areas of the site. If it could do that, I'd give it five.
