When logging into the admin we get the error
You do not have sufficient permissions to access this admin page.

This has only happened recently, when we disable the plugin the error goes away

It sounds like you may have hidden the Dashboard -> Home page. Try this: once you log in and get the error, manually type in the URL of the menu editor page. It's usually this:
    http://example.com/wp-admin/options-general.php?page=menu_editor
(Replace example.com with your site URL)

Then reset the required capability for the Dashboard and Dashboard -> Home menu items.

By the way, if you really need to hide the "Dashboard" menu for some reason, you can use Peter's Login Redirect to redirect people to a different page upon login. This way you won't get an error when logging in.
