I have wp-grins installed at my site (http://purrfection.sugar-melody.net) but I don't really like the plain yellow smilies that come with it, and I was wondering if there is a way to put in your own smiley set?

easy. find the ones you want, rename them with the names of the ones you want to replace and upload them to the smilies directory.
You could instead change the names in vars.php or even add the function to wp-config.php and change the names there. This will then trump the one in vars.
