Whenever I create a new post or edit an existing one, the server on my hosting becomes unresponsive for several minutes. I can only assume that the web server has crashed. I'm using WP 3.2.1 and has a strong dedicated server. I have a few plugins that deal with editing, but I disabled them and it still crashes.
Any ideas?

'1193M Used' that`s so much. just for a wordpress?

What type of server are you running? I recently dealt with a similar issue. It turned out, in my case, that a security feature (mod_security) on my server would be triggered almost every time I would post, locking my IP out.
If you're on shared hosting, you can often times call the managers and have them white list the rules.
Im on dedicated server.
Intel Quad Core Xeon X3430-4

right now when lookin at my error log on Cpânel i get tons of :
