work only for wordpress pages & posts

    If some plugin was written such way, that it is available for control to subscriber it is difficult to help.

    If all user can see all plugins – it seems you just included into their roles some extra capabilities.

    The most of plugins uses some capability to decide if user may or not control this plugin. For example if plugin uses ‘manage_options’ capability for its menu item, then user without such capability in its role can not see and call this menu item.
