hi,
I have some post titles with & in it, and it doesn't get converted into & amp; (added space to make it visible in this post) so, the validator shows me an error about that.

Yep.
WP has different rules for displaying titles and posts. Different rules for entering html entities from what is displayed. God help me, I've looked at the code and I wish I hadn't.
Go with the flow and delete the & in your titles and categories
