   I would like to customize WordPress Mobile Edition plug-in so that the 'About' page appears first, then a specific set of my Pages, and then the recent blog posts.

   Currently, the blog posts come up first, then all the pages on my site, then the About.

   Anyone know how to do this? What part of the plug-in or Carrington theme I need to edit?

   You modify it the same way you modify any wordpress site; you customize the theme. The carrington them is enabled when a mobile device is detected.

   A good start is to read the README.txt in the carrington theme folder.
