You should be able to use a plugin like http://wordpress.org/plugins/ultimate-posts-widget/ as all recipes are custom post types.
Tags should already work with the default WP Tag Cloud.

What would you like to do exactly?
Cuisine and Course are available as tags for your recipe. The Premium version will also feature custom tags soon.
Hehe…sorry. I will try to explain myself. I would really like to add a Tag cloud as a widget. It allready does it, under ingredients at the top left corner.
Im just thinking, that there is an output on Ingredients and cuisines, so it should be possible to create a widget using those outputs.
The same with Courses, that i can create a menu group widget, depending on what courses i have added my recipes in.
I know that i can do all of that, if im creating them as posts, but it just seems as double work.
By the way. Thank you a lot for a great plugin! I really enjoy it.

The course and cuisine are handled as taxonomies, so they should be available to use in the tag cloud widget, for example. At http://demo.wpultimaterecipeplugin.com/ you can see this for ingredients, but the same should work for cuisines and courses.
If you just want to display a list (instead of the tag cloud), you could try a plugin like this one: http://wordpress.org/plugins/list-custom-taxonomy-widget/
