I understand that using a child them prevents alterations from being lost when WP updates.

However, why does WP have to update? is there a way to prevent this?

The only way to prevent it would be to not update Wp when a new version comes out.

    Which, is a terrible idea.

WordPress updates are made to fix bugs, add new features, and most importantly for security fixes.

People choose not to upgrade because it is 'too hard' or too 'time consuming'

However, if they do not upgrade, they get hacked. Then they lose everything. All their content, files, everything. And that is much harder and far more time consuming to fix, if it can be fixed.

It's best to do things the right way from the start

Why can't I just make a copy of the whole theme, change the folder name and do a search and replace of the theme name in the contents new folder? I want to change a lot including the header and footer pages. I have tried this and it seems to have worked. Am I missing something important that's going to cause me grief in the future? Thanks.

Because then you wouldn't be able to take advantage of any future updates to the original theme - including bug fixes. If that's not an issue for you, then go for it. Many a new theme has come out of an adapted older theme.
