..other than not showing them in posts or excerpts? The real question is: Am I hurting my site's visibility by hiding post tags to browsers, and/or can crawlers still count those in as keywords, relevant to my site?

If you're not using them, hiding them won't hurt you. If you ARE using them, you're hurting your viewers ability to find things :)
