I'm a couple of minutes into the famous 5-minute installation, and I'm stuck. On my hosting control panel, on the same screen where I can create my database, there is a field for "collation." Which one do I use for a new WP installation?

If you will blog only in English - it doesn't really matter, the database (DB) will use the server's default collation if you don't select anything.
As a more complex answer: WP's default encoding (character set) is utf-8.
