In the media settings there should be a width default setting to constrain the width automatically. Currently it defaults to 640 pixels. There's also no thumbnail/placeholder image for videos when viewed on the browser (in Safari and Chrome on Mac).

  2. [video width="600" height="480" mp4="source.mp4" ogv="source.ogv" webm="source.webm"]

You should be able to constrain sizes... Is that behaving oddly for you?

I know I can hand-change the height and width adtributes after the short code is inserted but having a default setting (just like how it is for still images) would be ideal. I run a website with multiple authors, some are not very fluent in messing with these numbers so it would be much better to have a default value.

Also is there an atrribute for a placeholder image file? If the video starts playing and put into pause it holds the image but having a blank rectangle on the page would look strange to many. Even having a standard placeholder image (where I can put something saying 'Press here for video' would be better than a grey box.

The default width is the content width of the theme, via the $content_width global. 640px is used if that isn't set.
