upload image directories

I just found out that there are no more options to choose where your images are saved on a server in Media, Settings. Only the option to either check or uncheck if you want media saved by year, month folders in wp-content, uploads. If I uncheck this box will all new media I upload just be a long list of everything in alpha order under wp-content, uploads? Thank you.
