When I'm trying to upload media files to my website's media library, the files just hang after reaching the "Crunching" portion of the process using the HTML5 uploader. When using the browser-based uploader, I'm presented with an "Error saving media attachment" message after the file goes to the server...
Is anyone else having this problem? Is there a solution? :\

Without getting into the specifics of your situation, my own experience is that it is important to rule out host-based limits in memory and processor usage. By testing with a very small media file.

I've done that already, uploading a 100kb image and a 700kb video...same result, or a server time-out. Also, uploads were working well before upgrading the installation.
Do you need any more specifics in regards to the server?

I was thinking more like a 5KB image (typical 80x80 pixels), to start.

Just tried that; same result.

Thanks for your patience. But that basically eliminates memory and processor issues, which have been the main cause in the past. I'm going to have to let others take over from here. Unfortunately, the documentation does not yet have a Troubleshooting section:
