I would like to have a blog on my site that pulls information from only one category. I'd also like this blog to have it's own page. Is there a way for me to edit the code on a particular page so that the blog will be fed only by one category?

Yes, create a category template - http://codex.wordpress.org/Category_Templates - and you can even style the page differently.
