Does anyone know how I could track the IP addresses of my site visitors? I tried Google, Woopra, WordPress.com stats -- none of them lists the IP addresses of the visitors (as far as I can tell).

Try the plugin Statpress Reloaded. It will track IP addresses, country of origin, etc. etc. The plugin can be found through your add new feature of plugins dashboard.
