I want to use use tags to organise my content. However, clicking on a tag brings up no results.
For example: http://www.davidfordfans.com/tag/el-mocambo/
shows no results.
However a search for that tag: http://www.davidfordfans.com/?s=el+mocambo shows a load of posts, all of which have the tag of "el-mocambo"
What am I doing wrong?!
Try updating your permalink structure (see Administration > Settings > Permalinks)
If that doesn't work, what happens when you change to the WordPress Default theme--do tags work then? If so, make sure the template being used to display tags is not causing the problem (see Tag Templates and Template Hierarchy).

Permalink structure updated. Default theme shows no posts for particular tag, but admin and search pages do. Local installation with same codebase works. Baffled...please help.
