For my last 3 posts, no email was sent to my subscriber list. I haven't touched or updated Subscribe2, so I have no idea why this is happening or how to fix it.

If Subscribe2 hasn't changed then it is likely a limit imposed on your server by the hosting provider. Perhaps you got a few new subscribers that pushed you over their limit or maybe they just reduced their limit down.
Check with your hosting provider what restrictions they impose (none is not the right answer) and why your emails are being blocked.
