Sub Category Help

I am need of some assistance…..

Basically I have a bunch of buildings all across our country. Each of the posts is assigned to the subcategory for it’s state.

For Example, I have these categories set up:

City (Parent)
-Northern
–Nebraska
-Eastern
–North Carolina
-Western
–California
-Southern
–Texas
-Out of Country
–London

In my theme template files, how the heck would I show just the state/country name?

Because each of these locations is only added to one of these categories, I can’t seem to get it to display just one of the categories. It wants to display all the subcats… Any help is appreciated…..
