I have a few thousand wp blogs and every so often the "siteurl" and the "home" option in the wp_options table just go blank.
This causes the site to think it isn't setup, and shows the installation page. Of course this is a crazy security risk.
How can I stop this from happening?

Well, for one thing, you should upgrade to 2.9.1. Running 2.7.1 is a security risk and it's possible that your blogs are being hacked (don't quote me on that, just a thought).
