Every time I try to change my quantity or simply leave the page the cart will reset and delete anything that was in it.

I disabled all of my plugins and it still happens.
I’ll call the hosting company and talk with them about it.

About a month ago. Which is why I am guessing it has to do with the server hoster as it worked perfectly fine 2 months ago.

Yes that is probably correct. I would get in contact with your Host and let them know what is happening to your website.
