select fields Select an Option default

I have multiple fields with Select options and one defaults to ‘Select and Option’, but others default to of the select values. I want all of them to default to ‘select an option;, but I don’t see where that is done. When I go into the admin area to edit the field values, I don’t see where I can adjust that part.

Any ideas?
