I'm creating several wordpress sites for people. I'm creating the sites locally on my computer (I installed xampp which is running apache and mysql). I want to stop working on one site and start on another. How do I do that exactly? How do I bring up another theme and change all the info through the admin dashboard while keeping the first site intact?

I'm very new to word press so some of its methods are somewhat alien to me. I've worked with HTML and also Dreamweaver in the past. With HTML I just keep all my files in one folder and click on the index file to open the site I'm working on. What's the wordpress equivalent to that or is there one?
