Role is reset when user logs back in

Using the plugin I have all users defaulted to a Contributor role when their account is first created. Using an account with an Administrator role, I changed a specific user to have a role of Administrator as well. This worked well until they logged back in at which point their role was reset back to Contributor.
I’m guessing this was updated from the data in the SAML payload, but is it possible to have changes in the WordPress side of things take precedence? I don’t have the ability to make fine grain changes to the SAML role settings.
