I'm looking for a way, probably a plugin to replace textual category names on the sidebar with assigned images. Anyone heard of anything like that? Or do I have to write it myself? :)
The closest I found to that is the Category Icons plugin, but it works only within the loop and there's no way to use it with sidebar lists.

I do not know a plugin, with changes in the options

it is not possible.
I would process (preg_replace) the category-names to valid url-letters (like stefan's letters to stefan_s_letters and add an img-tag around.
