    It's my understanding that WordPress won't let you delete the "default" category, but I read somewhere that you could remove the php line: Posted in <?php the_category(', ') ?>
    I can't find this line anywhere in the theme I'm using.
    Anyone know?

    It's an artisteer theme, and I've searched throughout the theme directories for the 'posted in...' php code

    yeah, but I didn't see anything and this was what I'd read before:
    If you want to delete categories from displaying with your post...

    If you are using the WordPress Default theme, you would delete:
    Posted in <?php the_category(', ') ?>
    from the wp-content/themes/default/index.php file.

    I've looked in all the index.php files with no luck.

    you can try it with an added line at the end of style.css:

    .art-metadata-icons { display:none; }

    not ideal ...
