the Theme I'm using is Cool Biker 1.0 by Sushi Dating. At top of all the pages it has day created and who "posted in", and "Published in". when I first set this up I had a page where I could remove these options now I can't find it.

Try looking in the Appearance sub-menu of the Dashboard.
