Remove Specific Category from Dynamic Sidebar

I’d like to leave dashboard editing possibility of my sidebar but I need to have a category(s) removed from ‘Categories’ widget. Right now I’m using a static configuration (ie manipulating sidebar.php) with custom parameters in my wp_list_categories function.

So, is there a way I can modify the function that calls the categories in the Dynamic Sidebar widget?
