I'd like to use the help documentation - but edit it to reflect my company brand (eg- change screenshots). What sort of copyright is on the help documentation? Can i just copy-paste bits?

Are you talking about the Codex?

At the very bottom there is a footer > About Codex.
From there you can learn about the License type and all the copyright holders!

Even though Codex is held under the GNU General Public License (http://www.gnu.org/copyleft/gpl.html) each contributor still retains the copyright on their contributions.

I would not copy/paste the Codex unless my liability insurance company, my lawyer, and my doctor gave me the go-ahead ;)
