Quick question: on my Category Archive landing page, the whole blog post is shown. I know I can change content to excerpt in the loop.php file -- but for some reason the read more button isn't showing when I do this.

I checked out your demo site, where the excerpts are appearing correctly on the Cat landing pages... so I just wanted to make sure I wasn't missing something obvious.
