How do I insert certain posts under certain pages? I know that you assign a post a "category," but can you force these entries to also be put on a specific page of your wordpress site? For instance, I have a category called "Interviews" and a page called "Interviews." I know how to assign the post to the category "Interviews," but how do I also get this post to show up on the "Interviews" page? Thanks!

The WordPress native archiving ability will automatically produce a display of posts in a particular category and the links to the categories can be displayed with something like the Category Widget (Under Appearances menu).
If that isn't sufficient and you must display posts in a Page then look at the examples in the Pages article.
