Publishing to a category

New Blogger, here (Heck – we didn’t even have a refrigerator when I was growing up…)

I’m able to establish new categories on my blog, but can’t figure out how to post a blog to a category: e.g., I have a category entitled “Testimonials” and but can’t figure out how to actually post a blog to that category.
